preheat oven to 375. slice veggies into quarter inch sheets, brush with olive oil and arrange on baking sheets and sprinkle salt/pepper. roast for 25 mins, add 3 cloves crushed garlic, roast for 5 mins more

mix until very smooth: 8-16 oz ricotta, 1/4 cup chopped basil, 2 eggs, 1/2 cup shaved parm, 1.5 t salt, 3/4 t pepper

start with marinara, then 3 x (veggies, noodles, mozzarella, ricotta mixture, marinara), sprinkle 1/2 cup shaved parm. bake 60-70 mins, until top is browned
